Rửa sạch ức gà sau đó cho vào nồi cùng 3 củ hành tím, lá chanh và gừng xắt lát. Tiếp đến, đổ nước ngập thịt gà và cho vào 1 tí muối, sau đó đậy nắp nồi và bắc lên bếp để luộc. Để thịt luộc hơi nguội rồi xé thành sợi nhỏ. Lưu ý không xé quá nhỏ khi xào sẽ bị nát gà.
Cho 1 chén nước luộc gà vào chảo. Sau đó, cho vào bột ớt, nước mắm, ngũ vị hương, hành sả tỏi băm, và đường vào khuấy đều. Sau đó, bắc chảo lên bếp và cho phần gà đã xé sợi vào. Xào ở lửa lớn và liên tục đảo đều tay cho gà khô hết nước.
